Tomato Skillet
1/4 cup butter
1/2 cup chopped onion
2 tablespoon chopped parsley
1/2 teaspoon salt
1/4 teaspoon thyme leaves
1/8 teaspoon pepper
6 whole tomatoes, peeled and cored
Melt butter in skillet. Add onion, parsley, salt, thyme and pepper. Add
tomatoes, cored side down. Cover and cook 5 minutes. Turn tomatoes carefully,
basting with butter mixture. Cover and continue cooking 5 minutes. Serve in
sauce dishes with
sauce spooned over.
Serves 6.
