Zucchini Fritters
Mix:
2 cups zucchini, grated & squeezed dry
1 tsp parsley
1 tsp dill
1 tsp mint
1 green onion, sliced fine
1/4 cup feta
Stir in:
1/2 c flour or breadcrumbs (I use breadcrumbs)
1 egg
s/p to taste
Saute in 3 tbs oil until golden on both sides. I use a
tablespoon when placing them into the pan. Drain on paper
towel if necessary. I like to serve these either alone or
with a sauce of
fresh tomatoes sauteed w/1 large onion and a sprinkling of
fresh basil. They also make a great sandwich.
