Hi, everyone. I don’t often submit, but last night I had a
particularly good success and thought I would share. We had
dinner with a new couple, the wife of which is Vegan. Being
known for my desserts, I had to find something sweet to
serve. I made the following (tweaked from an All Recipes
one). One word of caution, some Vegans don’t eat sugar
because of the way it has been processed.
Vegan Chocolate Cake/Cupcakes
1 1/2 cups all-purpose flour
3/4 cup honey
1/4 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon distilled white vinegar
1 cup water
Preheat oven to 350 degrees F (175 degrees C). Lightly
grease one 9x5 inch loaf pan. Sift together the flour,
sugar, cocoa, baking soda and salt. Add the oil, vanilla,
vinegar and water. Mix together until smooth.
Pour into prepared pan and bake at 350 degrees F (175
degrees C) for 45 minutes. Remove from oven and allow to
cool.
*For cupcakes fill ¾ full. Cook for 20 minutes.
Vegan Chocolate Icing
1 cup powdered sugar (sifted)
¼ cup cocoa powder (sifted)
1/3 cup hot water
Add water to the sifted dry ingredients, 1 tablespoon at a
time. Stir.
