This recipe is a favorite of my picnic crowd for
topping a hamburger, hot dog or sandwich. It's easy to take
along and needs no refrigeration.
Sweet andSour Onions
Boil 1 cup water. Add 1⁄2 cup raisins. Cover and let soak
for 30 minutes then drain. (set aside)
In 4 Tbs olive oil saute until soft:
4 large onions, sliced thinly (Vidalia's are my favorite but
any kind will work)
Stir in and cook another 3-4 minutes to blend:
drained raisins
1⁄4 cup balsamic vinegar
1 1⁄2 Tbs sugar
