This is in response to Jane Ann in
Alabama, Monday's Newsletter request for Quiche I have used
this for many years and is always a big hit. Hope you enjoy.
Spinach Quiche
1 9-inch deep dish pastry
1 box chopped frozen spinach
1 small onion, chopped fine
3 pieces of bacon, fried and crumbled
1/2 cup grated cheddar cheese
1/2 cup grated Swiss cheese
1 cup milk
3 eggs
2 Tablespoons mayo
2 Tablespoons corn starch
Thaw spinach in the microwave and drain until almost dry.
Saute onions. Add onions, bacon and cheeses to spinach and
mix together, pour into pie crust. Then beat milk, eggs,
mayo and cornstarch. Pour over mixture. Bake 350 degrees for
approximately 45 minutes or until brown on top and set.
