Jane Ann in Alabama was asking for TNT quiche recipes, and this is our favorite, which is great for taking to a potluck, etc.

Spinach Quiche For A Crowd

For Crust:
3-3/4 cups flour
1-1/2 tsp. salt
1 cup shortening
3/4 cup water
1 egg
1 tbsp. milk

Beat egg with milk and set aside. Mix flour and salt in large bowl; cut in shortening with a pastry blender. Mix in water. Roll out dough and put in a ungreased 15 x 10 inch jelly roll pan. Prick with a fork. Brush with egg/milk mixture. Bake at 425º about 20 minutes, until golden brown. Cool.

Sprinkle cooled crust with 2 cups (8 oz.) grated Swiss cheese.

Filling:
1-3/4 cup cream (half & half)
4 eggs, beaten
1 tbsp. melted butter
1 tsp. salt
1/8 tsp. pepper
1/8 tsp. nutmeg
1 pkg. (10 oz.) frozen spinach, thawed and chopped with moisture squeezed out.

Mix all together well in a bowl and pour over cheese covered crust. Bake at 425º for 15 minutes and then reduce heat to 350º and continue to bake 10 to 15 minutes, till golden brown and knife inserted comes out clean. Cut in small squares to serve.
