Nancy this request is for Barb - La
Porte, IN who wanted a recipe for fried cabbage. I did not
have one with tomatoes but would think you could add a can
of stewed ones or a can of ROTEL. This request was in the
June 4, 2010 newsletter.

Southern Fried Cabbage
8 Servings
1 pound bacon
1 head green cabbage, (very large)
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon crushed red hot pepper
1 teaspoon sugar
1.Cut the bacon into 1/2" slices; transfer to a large
skillet and cook until very crisp.
2.Remove the bacon from the pan to drain on paper towels.
3.Cut the cabbage into 1" chunks; rinse with water
4.Pour off all but 2 tablespoons of the bacon drippings from
the pan and add the cabbage.
5.Stir fry the cabbage until it starts to get limp, then add
the salt, pepper, crushed red pepper, and sugar.
6.Continue frying until the cabbage is crisp tender.
7.Stir in the reserved bacon and serve immediately.
