Another great way to use up zucchini from the garden.

Sausage and Zucchini

2 tbsp. butter
1 onion, diced
1 can (1 lb.) stewed tomatoes
1 medium zucchini, sliced
1/2 cup grated Parmesan cheese
1/2 to 1 cup grated Mozzarella cheese
1 lb. smoked sausage, cut in large chunks potatoes (enough for family)
garlic powder and pepper, to taste

Boil potatoes ahead, cool and slice.

Brown sausage in butter; drain. Add onion, tomatoes, zucchini, potatoes, garlic powder and pepper. Cover and simmer for 20 minutes. Sprinkle with both cheeses; allowing to melt slightly. I used my electric skillet for this, which worked well for the dish.

Note: You can omit potatoes, if desired, but we like them in with this tasty dish. The original recipe calls for 1/2 cup Mozzarella, but we like more.
