I would like a tried and true recipe
for salmon patties that don't fall apart while frying.
Thank you Roberts wife in Ohio.
I have sent in my salmon loaf recipe in the past, and this
can also be made into patties if you like. I am not sure how
many it would make, but does make one loaf pan. Since all
ingredients can be frozen, you could freeze some, if too
many and have them on hand. Here is the recipe I took years
ago from the Sherrif Instant Mashed Potato box. Any instant
flakes mashed potato will work.
Salmon Patties
15.5 oz Canned Salmon
---------- Milk
2 Eggs lightly beaten
1 Tbsp lemon juice
3 Tbsp mayonnaise
2 Tbsp Ketchup
1/4 Cup Chopped Celery
2/3 Cup Chopped Onion
1 1/2 Cups Instant Mashed Potato flakes
Drain Salmon juice in 1/2 cup measure and add enough milk to
make 1/2 cup of liquid
Combine all ingredients and mix well
Pack into greased loaf Pan (OR) make into individual
patties. Bake at 350 degrees for 50 min. Allow to cool 5
min, slice and serve.
You could fry the patties in a frying pan lightly greased or
on a pan in oven lightly greased, of course you would have
to adjust the cooking time. As a loaf it's great and can be
sliced. We like ours with creamed peas served over a slice.
