Roasted Tomatoes
(The juicer the better)
Mix:
3 cloves of chopped garlic
3/4 bag of coarsely crushed (any flavor) croutons.
Toss with 2 Tbs olive oil and 2 Tbp fresh basil.
Cut tomatoes in half.
Place half in 9" pan (cut side up-I use a glass pie plate)
Sprinkle tomatoes w/crouton mixture
1/4 cup Parmesan cheese.
A light sprinkling of salt and some pepper to taste.
Top w/rest of tomatoes. Bottom side of tomato up. Drizzle
with a little olive oil.
Bake 400 oven 30-40 minutes.
