Irene in FL -- IF I had a Hot Pot similar to yours in office -- I'd use it by freezer-bagging my excess cooking (left-overs). Especially large pot items like stews, baked beans, pasta with sauce mixed in, homemade soups, heating sliced meat roast with gravy that can be put in a bun or bread -- and you'd save enough lunch money for some nice dinners out to justify it.

Two Nancyland readers have brought it to my attention that the topping is too thick to spread easily for the Orange Fluff Salad I submitted to the June 11th newsletter. I am really sorry about this, but I had checked again, and that is exactly the way I have it written down. This recipe was sent to me many years ago by a good friend in Mn., who is now deceased. I made it often when our four children were growing up, as it was a favorite. Recently I did recopy a lot of recipes into a new note book, as the originals were getting so worn and faded. I suspect that I made a error when recopying it, as I haven't tried it since I did that. I did find another similar recipe and the toping for that salad called for 1 (8 oz.) pkg. softened cream cheese, 1 (3.4 oz.) pkg. instant vanilla pudding and 1-3/4 cups milk beat together with electric mixer and spread over the Jell-O. It seems the difference is with the amount of milk used to make it spread easier? I hope this helps.

I happened to acquire a 35 pound box of Oreo cookie crumbs. Aside from a cookie crust for a cheesecake does anyone have any idea what I could do with these?

Jodi, you could use some of them to make ice cream blizzards. Just mix ice cream and as many crumbs as you like in a blender and serve. Or you could layer some in a glass with pudding or yogurt and make parfaits.

Shredded Wheat Snack Mix Recipe
Heat oven to 300°F

Mix:
4 cups Post Original Shredded wheat spoon size cereal
1 cup unsalted pretzels
1 cup popped corn in a shallow baking pan

Mix:
2 Tbsp. margarine, melted
1 Tbsp. Worcestershire sauce
1/2 tsp. Garlic salt

in a small bowl. Drizzle over cereal mixture.
Toss to coat. Bake 30 min or until crisp, stirring halfway thru baking time. Makes 12 half cup servings

Store in airtight container!

Here is another recipe for baked beans in the crock pot. I copied this from a 2005 newsletter, but no longer have the name of the person who submitted it. I have left out the soy sauce on some occasions, if I did not have any on hand.

Baked Beans with Pineapple for Crockpot

1 pound lean ground beef
28 ounces baked beans
8 ounces pineapple tidbits, drained
1 large onion, chopped
1 large green pepper, chopped (can be sweet red pepper or omitted)
1/2 cup barbecue sauce
2 tablespoons soy sauce
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper

In a skillet, brown beef; drain. Transfer to a 4 to 5-quart slow cooker. Add remaining ingredients and mix well. Cover and cook on low for 4-8 hours or until bubbly.(Really only needs to be heated up.) Serve in bowls. 6 servings

This is for Jody, who in the 6/29/10 newsletter requested recipes in which she can use crushed Oreos. Judy had a great recipe in the 6/29/10
newsletter that I have made often. Here are other great recipes. My family will eat anything that contains Oreos. These are all a great hit at pitch-ins.

Oreo Layer Cake Recipe

1 package white or yellow cake mix -- (2 layer size)
1 1/4 cups water
1/3 cup vegetable oil
3 eggs
1 1/2 cups Oreos -- coarsely crushed
 
Grease and flour 2 - 9" round cake pans, set aside. Prepare cake mix according to directions, using water, oil and eggs. Fold in crushed Oreos. Pour batter into prepared pans. Bake at 350 for 25 to 30 minutes. Cool on wire
racks for 10 minutes, then remove cake from pans. Cool completely before
frosting.

You can use cream cheese frosting and garnish with crushed Oreos. or another frosting of your choice. I use approximately1/2 can of store bought white frosting with 1 1/2 cups Cool whip mixed well; Then sprinkle additional crushed Oreo cookies on top of the cake and sides.

Oreo Balls

8 ounces cream cheese, softened
4 cups crushed Oreo's (a 20-oz package)
2 cups white chocolate chips, vanilla or semi-sweet chocolate chips (I
prefer the white chocolate)
1 Tablespoon shortening

On high speed of mixer, beat cream cheese until light and fluffy. Add cookies and beat until well combined. Refrigerate 2 hours until chilled enough to roll. Roll dough into 1" balls. Over double boiler, melt chips and shortening until smooth. Dip balls into mixture and thoroughly coat. Place on wax paper to harden. Store in refrigerator. You can take some milk chocolate chips and melt and drizzle on top of the white chocolate coating after it hardens.

Oreo Ice Cream Cake

1 sm. pkg. Oreo cookies
1/2 gallon coffee ice cream or other flavor
1 container chocolate frosting
1 c. chopped nuts
1/2 stick butter
1 (8 oz.) Cool Whip

Crush Oreo cookies (food processor). Melt 1/2 stick butter. Mix together
to make a crust. Spread into 9x13x2-inch pan. Top with ice cream; freeze.
When hard, spread chocolate frosting over ice cream, then spread Cool Whip on top or frosting. Sprinkle nuts or additional crushed Oreos. Freeze. Cut into squares.

Cookies 'n' Cream Fudge

16 chocolate cream-filled sandwich cookies broken into chunks
(divided, I used the Oreo's)
1 can (14 oz) sweetened condensed milk
2 tablespoons butter
2-2/3 cups vanilla or white chips
1 teaspoon vanilla extract

Line a 8 inch square baking pan with aluminum foil; coat with nonstick cooking spray. Place half of the broken cookies in pan. In heavy saucepan, combine milk, butter and chips; cook and stir over low heat until chips are melted. Remove from heat; stir in vanilla. Pour over cookies in pan, sprinkle with remaining cookies. Cover and refrigerate for at least 1 hour. Cut into squares.
Makes about 3 dozen pieces

Garlic Lime Chicken Fajitas

1/4 cup lime juice
1/3 cup orange juice
2 tablespoons olive oil
1 package McCormick Recipe Inspirations for Garlic Lime Chicken Fajitas (premeasured spices and recipe card)
1/2 teaspoon salt
11/2 pounds boneless, skinless chicken breasts, cut into thin strips
1 medium red or green bell pepper, cut into thin strips
1 medium onion, thinly sliced
8 (8-inch) flour tortillas

Mix juices, oil, all of the spices and salt in a small bowl. Reserve 1/4 cup of marinade. Place chicken in a large resealable plastic bag or glass dish. Add remaining marinade; turn to coat well. Refrigerate 30 minutes or longer for extra flavor.

Cook and stir chicken in a large heated skillet on medium-high heat 3 minutes or until lightly browned. Remove from skillet. Add bell pepper, onion and reserved marinade; cook and stir 5 minutes or until tender. Return chicken to skillet. Cook 2 to 3 minutes or until heated through.
Spoon chicken mixture onto warmed tortillas. Serve with assorted toppings, if desired.

If you can't find the spice package for Garlic Lime Chicken Fajitas in the spice aisle at your grocery store, here are the ingredients: 1 teaspoon minced garlic, 1 teaspoon minced onions, 3/4 teaspoon ground cumin, 3/4 teaspoon oregano leaves, 1/2 teaspoon cilantro leaves and 1/2 teaspoon coarse ground black pepper.

Boil in Bag ideas for Irene in FL: I've seen Success Rice boil-in-bags but not much else in small servings in regular supermarkets. Try Army/Navy stores for MRE (Meal ready to eat) or search online. You can make your own: divide a bag of your favorite frozen stirfry vegetables into individual servings in good quality pint freezer bags (not the zipper ones). Add a slice of turkey/ham/beef deli meat (or leftover chicken, etc.), cooked rice or pasta and seasoning. Seal, freeze. You can also "bag" individual portions of casseroles, soups, stews and other dishes you make at home to freeze and reheat in your hot pot.

Being my grandson isn't a fan of onions, this is a recipe I make quite often.

Meatloaf

2 eggs
2 teaspoons salt
3 slices, crumbled bread
1 large carrot, shredded
1 pound ground chuck
2/3 cup milk
1/4 teaspoon pepper
1/2 cup shredded cheddar cheese

Blend well. Pack into greased loaf pan. Top with:

1/4 cup catsup
3 tablespoons brown sugar
1 tablespoon prepared mustard

Mix well. Bake at 350° for 1 hour. Let stand 10-15 minutes before serving.

Fish Fillets Au Gratin

1/4 cup dry bread crumbs
1 cup shredded cheddar cheese
1 teaspoon paprika
1/2 teaspoon onion salt
1/4 teaspoon salt
1/4 teaspoon pepper
2 pounds fish fillets

Preheat oven to 400°. Combine all the ingredients, except the fish. Place the fillets on individual squares of greased foil. Spoon the mixture over the fish. Seal the foil securely. Bake at 400° for 30-35 minutes or until fish flakes easily. Or you can bar-b-que for 20-25 minutes. Serve.

Roasted Tomatoes
(The juicer the better)

Mix:
3 cloves of chopped garlic
3/4 bag of coarsely crushed (any flavor) croutons.
Toss with 2 Tbs olive oil and 2 Tbp fresh basil.

Cut tomatoes in half.
Place half in 9" pan (cut side up-I use a glass pie plate)
Sprinkle tomatoes w/crouton mixture
1/4 cup Parmesan cheese.
A light sprinkling of salt and some pepper to taste.

Top w/rest of tomatoes. Bottom side of tomato up. Drizzle with a little olive oil.

Bake 400 oven 30-40 minutes.

Jodi from Kansas City June 29 Oreo crumbs

I used to make a Dirt Pudding for parties at work its so easy.

Buy a nice plastic flower pot with a saucer attached to stop dripping and some silk flowers to stick in the pot.

Fill the bottom of the pot with a cup or so of crumbs. Mix a large instant pudding any flavor you like according to package directions then beat in an 8 oz softened cream cheese and a medium cool whip. Then just layer the pudding mixture and crumbs until you have used all the pudding and finish with a layer of crumbs on top. It'll look like a flower in a pot and what a surprise when you serve up the center piece

Baked Onion Rings

1/2 cup liquid egg substitute
1 large sweet yellow onion, cut into rings
1/3 cup dry bread crumbs, plain or seasoned
salt and pepper to taste

Mix egg substitute, salt and pepper. Dip onion rings into egg mixture and then coat with breadcrumbs. Place in a single layer on a greased baking sheet. Bake 10 minutes at 450 degrees.
Makes 4 servings

My favorite snack

Orange Jell-O Snack
Serves 6
Weight Watcher Points - 1 point

2 boxes sugar free orange Jell-O
1 1/2 cup boiling water
Mix until dissolved.

Add 1 Cup plain (unflavored) yogurt to 1 can of orange mandarin segments (with the juice). Mix together with the Jell-O, Pour into Jell-O mold, glass dessert pan, or 6 cups.
Each serving = 1 point

If you pour this mixture into a reduced fat graham cracker pie crust add 3 more points for 1/6 of this pie crust.

Lemon Cookies

1 pkg. Duncan Hines lemon supreme cake mix
1 egg, beaten slightly
1 (8 oz.) Cool Whip
Powdered sugar

Mix cake mix, egg, and Cool Whip together. Coat hands with powdered sugar. Spoon mixture and roll in a ball. Press with wet fork coated with sugar. Bake approximately 10 minutes on a greased cookie sheet at 350 degrees.
