Here is a very easy Fruit loaf that can be made with any
dried fruit that you have in the pantry.
Raisin Loaf
60 gms (2 oz) softened butter
1 cup sugar
1 cup water
1 cup raisins
2 cups self-raising flour
Pre heat oven to 180C (350F).
Place butter, sugar, raisins and water in a saucepan and
bring to the boil, simmer for 5 minutes then set aside to
cool.
Add flour and mix, extra water can be added if needed.
Bake in a greased loaf pan and bake for 45 minutes.
Frost with a Lemon Frosting using 1 cup icing sugar(powdered
sugar) and the juice of 1 lemon to make a paste.
