There have been several interesting recipes in the
newsletter lately using Jell-O, and this is a quick 'n' easy
cupcake recipe, that I've been making for years. Children
love them, and so do the adults!
Rainbow Cupcakes
1 (18 oz.) white cake mix
1 package (3 oz.) Jell-O - any flavor
Mix cake mix according to directions on the box, adding 1/2
package of
the Jell-O.
Spoon into 24 paper-lined muffin cups. Bake at 350º for 20
minutes, or
until toothpick inserted in one comes out clean.
Cool on wire racks and frost.
Rainbow Frosting:
1/4 cup melted butter
2 tbsp. evaporated milk
2 cups powdered sugar
remaining 1/2 package Jell-O
Mix together well (may need to add more powdered sugar for
right consistency) and frost tops of cupcakes.
