I am windy tonight. lol I enjoyed reading the Newsletter and
I saw the request for Peanut Butter Pie, so I thought I
would send one in. I also came across a cook book while
searching through the books at the Goodwill. lol I love to
go there and just browse. This book is titled "Best
Recipes-From the backs of Boxes, Bottles, Cans and Jars" It
has some old time favorites in it. So,
if anyone remembers a recipe that was on the back of
something, just ask and I will see if it is in here.
Here is the recipe for Peanut Butter Cream Pie
Peanut Butter Cream Pie
3 egg yolks
3 cups milk
1 cup sugar
1/2 cup cornstarch
1/4 tsp. salt
1/2 cup peanut butter (cruncy)
2 tsp. vanilla
1 baked pie shell
1 cup whipping cream (optional)
chopped peanuts
Combine egg yolks and milk in saucepan. Blend well, combine
sugar, cornstarch and salt and stir into egg mixture, cook
over low heat, stirring constantly until thick. (this will
be quite thick and perhaps look lumpy) Pour hot filling into
bowl and cover with wax paper. Chill, whip chilled mixture
with electric mixer until creamy. Add Peanut Butter and
vanilla, beating until smooth. Pour into baked pie shell and
top with whipped cream or topping. Sprinkle chopped peanuts
on top.
This is an old recipe given to me many years ago. I hope you
enjoy it.
