Onion Rings

To Pat in SC looking for a good onion rings recipe: I can’t remember where I found the recipe, but these are really good! Mix one can of beer with 1 ½ cups flour, I add just about 1/4 tsp of baking powder & 1/2 tsp salt. I also add a little cayenne pepper in there since we love it so! Mix this together & let it sit for at least 3 hours. Whisk it up after the setting time then you’re ready to use it. I toss my onion slices with just a little flour first then dip the onion rings one at a time into the batter mixture. Fry in hot oil, they only take a minute or two for each side. When they’re a nice golden brown color, take them out, drain on paper towel & sprinkle some salt on them while they’re still hot. So tasty!
