Mint Garlic Sauce
Try this to use your abundance of mint

Mint Marinade
1/2 cup of chopped mint
5 cloves of chopped garlic
1 pinch of salt

Grind the above in a mortar and pestle
Add equal amount of lemon juice and olive oil (enough to make a thick slurry)
Mix well with the mashed mixture.
Use on any meat especially chicken.

This can be used before roasting or as a sauce after roasting.
