Lima Bean Pot
1 pound dried lima beans
1 pound bulk sausage
1 onion, chopped
1/2 green pepper, chopped
1/2 cup celery, chopped
1 (15-oz) can tomato sauce
2 tablespoons brown sugar
1-1/2 teaspoons salt
1 teaspoon chili powder
1/8 teaspoon cayenne pepper
Wash beans; cover with water and boil for two minutes.
Remove from heat; let stand one hour and return to boil.
Cover; reduce heat and simmer one hour. Brown sausage in
skillet; add onion, green pepper and celery and saute until
tender. Add meat mixture and remaining ingredients to beans
and cook until beans are tender. Add more water if
necessary.
