To Mary who wanted a recipe for hog
head cheese in the June 4 newsletter.
While I do not like it, this is a very popular dish in my
part of the country. This recipe comes from an excellent
Cajun cook and is the one my brother-in-law always uses.
Hog's Head Cheese
a hog head
red pepper
1/2 cup corn meal
1/2 cup chopped parsley
2 cups liquid from boiling head
salt
black pepper
1/2 cup chopped onion tops.
Boil hog head in enough water to cover until tender. Remove
from liquid and grind meat.
Season the meat with salt, black and red pepper. Put into a
sauce pan.
Add the corn meal, onion tops, parsley, and 2 cups liquid
from boiling the head. Cook for 15 minutes. Pour in a large
pie plate and allow to cool. Serves 8.
