Here is a recipe that I was served
last weekend that is easy and the recipe was requested by a
lot of people in attendance:
Green Chili Casserole
3 eggs, beaten
3 C milk
1 C Bisquick
salt to taste (probably 1/2 to 1 t.)
2 cans Ortega diced green chilies (4 oz. each)
1 1/2 pounds Monterey Jack cheese, grated
Mix together and pour into 9 x 13 baking pan. (I think I
would spray the pan with Pam)
Bake at 350 for 45-60 minutes.
I am sure that meat of some kind could be added - ham,
sausage, hamburger or bacon. I think I could have eaten half
of the pan of this casserole myself. It was that good. It
was served as a brunch item. We are thinking of serving it
with a green salad and fruit at a hospital volunteer's
luncheon coming up. It would probably make 12 individual
servings.
