This for Mary B. in NC that requested recipes for a reunion
on Friday's Newsletter. These are all easy and tasty, best
if made the night before.
Fresh Broccoli Salad
2 stalks fresh broccoli
2/3 cup raisins
2/3 cup peanuts
½ cup green onion, chopped fine
2/3 cup shredded carrots
1/2 lb. bacon, cooked and crumbled
1 (18 oz) can water chestnuts, chopped
Dressing:
1 cup mayonnaise
½ cup sugar
3 T. vinegar
Wash and cut broccoli into bite-sized pieces. (Peel large
steams and chop into small pieces.) Combine broccoli,
raisins, peanuts, onion, carrots and water chestnuts.
Combine mayonnaise, sugar and vinegar. Mix well. Pour
dressing over broccoli mixture and toss. Chill. Just before
serving, mix in the bacon.
