Hi everyone :) In response to a quiche recipe. I must have missed it the first time around but we have one that we love. Since we are watching our weight (or supposed to be LOL) this one is great for us plus it just plain tastes great. Donna in KS

Crustless Spinach Quiche

1 tablespoon vegetable oil
1 onion, chopped
1 ts chopped garlic
1 (10 ounce) package frozen spinach, thawed
5 eggs
3/4 lb cheese of choice, I use 2% shredded cheese
salt and pepper
optional: sliced mushrooms, green or red pepper, whatever suits your fancy.

Preheat oven to 350-degrees F. Spray 9-inch pie plate with Pam. .
Heat oil in skillet over med. high heat. Add onion and saute until browned (5 min).
Add any optional veggies that you might want allowing to cook as you usually would for those veggies.

Add Garlic.Add spinach; cook until excess moisture evaporates. Let cool.Beat eggs in bowl. Add cheese. Stir egg-cheese mixture into onion-spinach mixture. Season to taste with salt and pepper, if desired. Turn into pie pan, spreading top evenly.
Bake until top is browned and tester (I use a toothpick) comes out clean, 40-45 minutes.
Serves 6
