This is a dish that I brought to a
picnic on Memorial Day and it was very well received.
A great take-along salad that does not need refrigeration.
Recipe can be doubled.
Marinated Chi Chi Bean Salad
Toss together:
1 can chi chi beans, rinsed & drained
1/2 cup raisins, dried cranberries or a mix
1/4 cup roasted peppers
1/4 cup chopped parsley
2 chopped scallions or spring onions
3 Tbs olive oil
S/P to taste
Marinate at least 2 hours and serve at room temperature.
