This is for Sandra from Oregon, who was requesting butter
brickle cake made with ice cream. The Cake Mix Doctor
Cookbook by Anne Byrn has one;
Brittle Brickle Cake
1 package white cake mix
2 cups of good quality ice cream, melted....your choice
3 eggs.
Lightly mist bundt pan with oil spray and dust with flour.
Mix cake mix, ice cream and eggs at low speed for 1 min.
Scrape down sides and increase speed to medium and beat for
2 min. Batter should look thick and well blended. Pour into
pan and bake at 350 for 38 to 42 min. Cool on wire rack for
20 min. Run sharp knife around edge and invert onto a small
rack to turn right side up. Cool complete for another 30
min. This would be great with a butter brickle cake mix and
butter brickle ice cream
