Hi Nancy, furry assistants and Nancylanders. I hope everyone is having a good summer. I think we had our summer in May, now a few days after summer officially started we are having cold temperatures and cold winds again.

Irene asked for a recipe for baked beans, she could make in a crockpot. The following is my regular recipe but when we had the really hot humid weather last month I decided to cook them in my crockpot. The only thing I did different was leave out the salt pork. I cooked it for the same length of time on High.. I hope it helps.( If you don't have smoked pork hocks it works fine also. The hocks will give it a bit more flavour.)

Betty's Baked Beans

I don't really have a recipe, I sort of wing it every time I make them. This is basically what I do.
Soak 1 pound of Navy beans in water, to cover, overnight. In the morning make sure beans are covered by at least an inch of water, bring to a boil and boil until the skins begin to pop.

Then add:-
1 medium to large onion, chopped
about 1/4 cup molasses
about 1/4 cup brown sugar
1/4 to 1/3 cup ketchup
1 heaping tablespoon mustard
1 tablespoon vinegar
Salt & Pepper to taste
a little garlic powder (optional)
A little piece of salt pork cut up.
Stir well.
Then add:-
1 or 2 smoked pork hocks (if frozen let thaw).
Remove skin from smoked pork hock. Place in center of beans, then place a few strips of bacon on top of beans. Bake, uncovered, in preheated 350ºF oven for 5 to 6 hours until beans are soft.
