Good Morning Nancy and all Friends
I have another sugarless recipe. Instead of being muffins it is a bread and very good.

Almond Cranberry Loaf (Diabetic Style)

1 1/2 C wholewheat flour
1/2 C brown Splenda
1 tsp baking powder
1/2 tsp each baking soda and salt
2 eggs
1 1/2 C buttermilk
1/2 Cbutter- melted margarine
1 tbsp almond extract
1 C dried cranberries
1/2 C chopped almonds

Preheat oven to 350. Grease a loaf pan and do it very well. In a large bowl, combine flour, splenda, baking powder and soda and salt. Make a well in the center add eggs, milk and margarine and almond. combine.

Sprinkle in cranberries and almonds, stir just to combine. Bake for 65 to75 min. or until centre come out clean when picked.
