A perfect way to reap the bounty of summer
and keep your cooking to a minimum.

Zucchini, Ham, Basil and Ricotta Fritters

Mix:
1 cup flour
1 1/2 tsp baking powder
1 tsp salt

Whisk and stir into flour mix:
2 eggs
1 1/2 Tbs butter, melted
1/3 cup milk
pepper
1/2 cup ricotta cheese

Lastly, mix and fold in:
1/4 cup basil leaves
1/3 cup ham, chopped
1 zucchini, cut in half & then cut into thin strips
(I use a box grater or vegetable peeler for this)

Heat some oil in pan and drop in 2 Tbs batter for each
fritter. Do not over crowd pan. When golden on one side
flip and cook other side.
