Zucchini Carpaccio Salad
Mandolin 3 large zucchini. Toss w/1 1/2 tsp salt. Let drain
in colander 20 min. Pat dry.
Place on bed of favorite greens.
Mix:
3 Tbs olive oil
juice 1 lemon
pepper
1/2 cup Parmesan or Romano Cheese
Toss and check for salt & pepper to taste.

Scalloped Tomatoes w/Croutons
In 3 Tbs olive oil saute:
2 1/2 c bread cubes until golden.
Mix:
4-5 large ripe juicy tomatoes, diced
1 Tbs garlic
2 Tbs sugar
1 tsp s/p
Add to toasted bread cubes and cook 5 minutes.
Stir in:
1/2 cup basil leaves, chopped
Transfer 1/2 mix to buttered casserole top w/1/2 cup
Parmesan. Top with rest of mix and top w/additional 1/2 cup
Parmesan. (At times I use Asiago cheese in place of
Romano/Parmesan)
Bake 350 35-40 min.
Serve hot or room temp w/bean salad or green salad or one
poached egg on top of each serving.
