Southwestern Corn Relish
3 large ears fresh corn, husks and silk removed
2 t olive oil or salad oil
1 small red pepper, diced
1 jalapeno pepper, minced
1/2 small onion, diced
1/2 t salt
1/4 t ground black pepper
2 T white wine vinegar
3/4 t sugar
1 T chopped fresh cilantro leaves
In large saucepan over medium heat in oil cook red pepper,
jalapeno pepper, onion, salt and pepper - stirring
frequently. Cook until vegetables begin to soften - about 5
minutes
Into pepper mixture in saucepan, stir in white wine vinegar,
sugar and 1 T water.
