Sauerkraut Salad
1 Cup Chopped Onion
1 Cup Chopped Celery
1Cup Chopped Bell Pepper
1/2 Cup Chopped Red Bell Pepper
1/2 Cup Chopped Yellow Bell Pepper
3/4 Cup Sugar
1 Large Can Sauerkraut (undrained)
Salt and Pepper to Taste
DO NOT DRAIN SAUERKRAUT.
Combine ingredients, mixing well and refrigerate for at
least 3 hours or overnight. This is best if it sets
overnight. Make sure you stir it several times turning over
the sauerkraut.
My wife used to make this several times a month during the
Summer.
Now I make it at least once a month.
