Ro-Tel Potatoes
6 to 8 medium red potatoes, peeled
1 chopped onion
1 chopped bell pepper
1/2 stick margarine
1 pound Velveeta cheese
1 can original Ro-Tel tomatoes
4-ounce can mushrooms
Boil potatoes whole for 6 to 8 minutes. Cool and slice.
Place in bottom of greased 9-by-13-inch casserole dish.
Saute onion and bell pepper in margarine until done. Add
cheese, Ro-Tel and mushrooms. Stir until cheese melts and
ingredients are well mixed. Pour sauce over potatoes. Bake
until bubbly, 20 to 25 minutes, at 350 degrees.
