Plantation Squash

12 medium yellow Squash
1 large pkg. cream cheese, softened
2 cups chopped spinach
3 well beaten eggs
6 tbsp. melted margarine
1 tbsp. sugar
1/2 tsp. seasoned salt
1/2 tsp. onion salt
1 tsp. pepper
1 cup Ritz cracker crumbs
1 cup bacon cooked and crumbled
sprinkling of Paprika

Cut squash in half lengthwise. Boil until tender. Scoop out pulp with a spoon and place in a bowl. Boil spinach in lightly salted water until tender. Drain well, add to pulp. Add cream cheese to warm mixture. Add all ingredients
except the last three into mixture and mix well. Lightly salt squash shells and fill with mixture, mounding the top. Garnish each squash with crumbs, bacon and Paprika. Place on lightly greased baking sheet or shallow pan. Cover with foil and bake at 325 degrees for 30 mins.

Maybe prepared a day ahead.
