Loaded Baked Potato Salad
8- potatoes, cubed (1/2 peeled & 1/2 with skin)
2- tsp salt
6- slices cooked bacon, diced
6- green onions
2- cups shredded cheese
16 oz sour cream
1/4 tsp pepper
1/2 cup mayo (opt)
1. Cube potatoes & boil with salt. 2. Crumble bacon & sliced
onions, including tops, set aside. 3. Combine sour cream &
mayo if using & add to potatoes. 4. Add bacon, onions &
cheese, saving some of all for the top. 5. Mix well into
potatoes. 6. Pour in spayed baking dish. 7. Top with
remaining cheese, onions & bacon. 8. Bake @ 350 for 10-15
mins or until cheese melts.
Potato Soup (good when you can't hold food on your stomach)
2- potatoes diced fine. Cook on low. Use just enough water
to cover potatoes, drain. Add cheese & a little salt to
taste. Then add just enough milk till it's thin.
