Green Tomato Casserole
October 2006 Newsletter

4 green tomatoes, thickly sliced
1 tsp. salt
2 tbs. butter
1 c grated cheddar cheese ( I use Sharp Cheddar)
1 c crackers, crushed
1 Tbs. butter, melted

Preheat oven to 350 degrees. Lightly spray an 8 inch square baking dish with vegetable cooking spray.

Layer green tomatoes with salt, pepper, butter and cheddar cheese in greased dish.

Bake at 350 degrees for 30 minutes, or until the tomatoes are tender. Sprinkle cracker crumbs on top and drizzle with butter. Bake 5 minutes longer.
Serves 4

I looked up the recipe and found it to be 2 tablespoons butter.
