Nancy, I had some chicken thighs in the refrigerator I
needed to use, along with a green pepper and some mushrooms.
I formulated this recipe, and it was SO good, my husband and
I are having it again tonight!
Elegant Chicken
4 Tbs. olive oil
6 chicken thighs
1/2 cup all-purpose flour
2 tsp. Cajun seasoning
1/2 tsp cinnamon
1 onion, halved and sliced
1 bell pepper, sliced
4 cloves garlic, minced
8 oz. button mushrooms, sliced
1 cup chicken broth
1/2 cup rose wine
1/2 tsp. salt
4 oz. dried cranberries
1 cup pimento stuffed green olives
In a large saute pan, heat oil.
Combine flour, Cajun seasoning, and cinnamon in a ziploc
bag. Add chicken, and turn bag several times, till chicken
is well coated.
Place chicken in hot oil. Brown on both sides, and remove to
a platter.
In pan with seasoned oil, add onion, pepper, and garlic.
Saute about 5 minutes. Add mushrooms and salt, and saute
another 5-7 minutes. Add chicken broth and wine, and salt.
Stir, to combine. Add cranberries and olives, and stir
together well. Place chicken thighs on top, and cover.
Simmer for 30-45 minutes, till chicken is done and juices
run clear.
Serve with mashed potatoes.
