Chilled Cucumber Soup -- this is a super, super recipe for summer - very refreshing and a good way to use up the cucumbers that are so plentiful now

Chilled Cucumber Soup

3 C sliced cucumbers
1 onion, chopped
2 T butter

Saute in large skillet

Add to skillet and simmer 10 minutes

1 t salt
1 T flour
2 C chicken broth
Juice of 1 lemon
Pinch of dried dill weed

Puree in blender - freeze if desired at this point (and it does keep well)

Stir in 1 C sour cream
1 cucumber, seeded and grated


I always use low fat sour cream to make it healthier.
