Betty in Me. was asking how many
servings the Strawberry Special Salad
made, and there wasn't any serving
amount given in the recipe, but I've
taken it to dinners, where there was
around a dozen guests, and there was
plenty of salad for everyone. If there
are other dishes to chose
from, such as at a potluck, people
generally only take a spoonful of
everything.
Here is a quick and delicious dessert
I'd like to share with the
readers.
Cherry Upside Down Cake
Topping:
1/2 cup firmly packed brown sugar
3 tbsp. butter
1 can (21 oz.) cherry pie filling
Cake:
1 yellow cake mix (with pudding in it)
1 cup water
1/3 cup cooking oil
3 eggs
Place brown sugar and butter in bottom
of a 9 x 13 inch greased baking pan.
Place pan in 350º oven for 4 to 5
minutes, until butter is melted. Spoon
pie filling evenly over brown sugar
mixture. In large bowl, combine all cake
ingredients; beat at low speed of
electric mixer until moistened. Beat 2
minutes at high speed. Pour batter
evenly over pie filling. Bake at 350º
for 50 to 55 minutes, or until toothpick
inserted near the middle, comes out
clean. Run knife around edge of cake to
loosen.; immediately invert onto serving
tray. Cool completely. Serve with
whipped cream if desired.
12 to 16 servings.
