This is a very quick, easy and good recipe. I discovered it
on the back of a Minute Rice box.
Beef and Rice
1 lb. lean hamburger
1 tbsp. chili powder (more or less to your taste buds)
1 cup medium salsa
2 cups corn (original recipe called for green beans)
1 1/2 cups instant rice, uncooked
1 cup Tex-Mex shredded cheese
Brown meat and chili powder. Add salsa, water and corn.
Bring to boil. Stir in rice. Cover and reduce heat. Simmer
for 5 minutes. Remove from heat and top with cheese; cover
again and let sit 5 minutes until liquid is absorbed and
cheese has melted. I have made this without the cheese and
it is also very good that way.
