Polenta Biscuits
170g butter*
170g sugar
255g polenta
100g plain flour
2 oranges, zested
2 eggs
1. Rub the butter into the flour and the polenta until it
resembles breadcrumbs
2. Add the sugar and beat in the eggs and the zest. Cover
with cling film and chill for 1 hour
3. Place small teaspoons of the mixture on greaseproof paper
on baking tray
4. Bake for approximately 8 minutes at 190c until edges are
golden
5. Cool on cooling wire for at least 15 minutes before
eating
*I used margarine and they were good, but if you are a
butter person - go for it, unfortunately I can't.
