Easter Potato Egg Candy
Cream Eggs:
3/4 c. mashed potatoes
2 boxes confectioners sugar
1-1/2 tsp. vanilla
1/8 tsp. salt
Dip For Cream Eggs:
3 pkg. semi-sweet chocolate
2 sq. bitter chocolate
Eggs: Mix together (potatoes should be
cold); set one hour before dipping. Roll
into eggs before setting. Makes
approximately 36 medium eggs.
Dip: Melt in double boiler and dip
immediately. Let stand after dipping, to
harden.
