Cranberry Mince Pie 2 1/2 c. cranberries 1 1/4 c. sugar 1/4 c. water 1 can (22 oz.) mincemeat pie filling 1 tbsp. lemon juice Double crust pastry for 9 inch pie Combine cranberries, sugar and water in pan. Heat to boiling, reduce heat and simmer until cranberries pop, about 5 minutes. Stir in mincemeat and lemon juice. Cool. Prepare pie crust. Spoon cranberry mixture into crust. Place top on pie; pattie top is pretty but not necessary. Bake 40 minutes at 400 degrees or until filling bubbles and pastry is golden. http://www.nancyskitchen.com
