Venison Meatloaf
1 lb. ground venison neck,
shank, flank or shoulder
1/2 lb. ground pork
1 egg
1/2 c. dried bread crumbs
1 Tbsp. chopped onion
1 1/2 tsp. salt
1 c. milk
1/2 c. prepared mustard
1/2 c. ketchup
2 Tbsp. brown sugar
Beat the egg; add milk and bread crumbs.
Mix thoroughly with the meat and
seasoning. Put in loaf pan. Mix mustard
and ketchup with brown sugar. Spread
over top of meat loaf. Bake in medium
350 degrees oven for 1 hour. Pour off
excess grease, if necessary.
Note: Meat loaf may be made with all
venison, but addition of pork makes a
more tender loaf.
