Microwave Layered Meatloaf Ring

Meat Loaf:
1 1/2 lb. ground beef
2 eggs
1/2 medium onion, chopped
1/4 c. dry bread crumbs
1 Tbsp. Worcestershire sauce
1 tsp. seasoned salt

Filling:
3/4 c. water
2 Tbsp. butter
1/4 tsp. thyme (optional)
2 c. dry seasoned stuffing mix

Topping:
1 can (4 oz.) sliced
mushrooms, drained and
divided
1/2 medium onion, sliced and
separated into rings

Combine loaf ingredients and mix well. Divide into
thirds. Measure water into a 1-quart measure. Add butter and
thyme; microwave at High 1 1/4 to 1 3/4 minutes, until boiling.
Stir in stuffing mix. Assemble loaf:
Place half the mushrooms in bottom of ring mold. Top
with onion rings. Cover with 1/3 loaf mixture. Mix remaining
mushrooms into stuffing. Spoon half of stuffing over meat in
ring, leaving 1-inch borders. Top with second 1/3 of meat
mixture. Press edges firmly to seal. Repeat with remaining
stuffing and meat. Seal edges. Microwave at High 5 minutes.
Reduce power to 50% (Medium). Microwave 8 to 13 minutes,
rotating dish 1/2 turn halfway through cooking time, until meat
is firm and has lost its pink color. Turn out on platter.
Serves 4 to 6.
