Meatloaf with
Almond Apricot Sauce
1 1/2 lb. ground beef
1/2 lb. pork sausage or ground pork
1/2 c. finely chopped sweet pickles or
pickle relish
1/2 c. onion, finely chopped
1 egg
3/4 c. evaporated milk, undiluted
1 Tbsp. lemon juice
1 to 1 1/2 tsp. salt
1/4 tsp. pepper
Almond-Apricot sauce
Mix ground beef with sausage, pickle and
onion. Combine
milk, egg, lemon juice, salt and pepper;
beat with fork or wire
whip until blended. Pour over meat
mixture and mix well.
Shape into loaf and place in baking pan.
Spoon about 1/2 cup
Almond-Apricot sauce over meat and bake
in moderate 350 degrees oven for about 1
hour. Spoon off excess fat; pour about
half of remaining sauce over meat. If
desired, surround meat with pared sweet
potatoes and carrots. Bake for another
20 minutes; then pour remaining sauce
over loaf and vegetables. Sprinkle loaf
with almonds. Continue baking for 15 to
20 minutes or until meat and vegetables
are done and almonds are lightly
browned.
Slice meat and spoon sauce over slices.
Makes 6 generous servings.
Almond-Apricot Sauce:
1 (12 oz.) can apricot nectar
1 Tbsp. vinegar
1 Tbsp. brown sugar
1 Tbsp. Worcestershire sauce
3/4 tsp. dry mustard
