Hawaiian Meatloaf

2 lb. ground beef
1 envelope brown gravy mix
1/2 c. milk
1 tsp. instant onion
2 eggs
1 Tbsp. snipped parsley
2 tsp. soy sauce
1/2 tsp. salt
dash of pepper
1 c. soft bread crumbs

In a large mixing bowl, blend 1 envelope brown gravy mix and 1/2 cup milk. Stir in 1 teaspoon instant minced onion; let mixture stand a few minutes. Stir eggs, snipped parsley, soy sauce, salt and pepper into gravy mixture. Stir in bread crumbs. Add ground beef; mix well to combine all ingredients. Shape the meat mixture into 2 loaves; place the beef loaves in a shallow baking pan. Bake at 350 degrees for 50 minutes. Spoon off the excess fat.

Using one (16 ounce) can sweet and sour sauce, pour a small amount of the sweet and sour sauce over the beef loaves. Return to oven and bake 15 minutes longer. Heat remaining sweet and sour sauce. Serve sauce with meat loaves and rice.
Makes 8 servings.
