Eggplant Meatloaf
1 lb. lean ground beef
1 lb. ground lamb
1/4 lb. pork sausage
1 lg. eggplant
2 eggs, beaten
1 onion, diced
2 cloves garlic, chopped
1 tsp. chili powder
1/4 tsp. pepper
Brown meat in skillet. Chop unpeeled
eggplant. Boil or bake chopped eggplant
until soft. Add cooked eggplant to
combined meats. Add all other
ingredients. Mix well. Place in baking
dish. Bake at 350 degrees for 45
minutes.
