The types of tuna are (from largest to smallest)
Bluefin Tuna, Southern Bluefin Tuna, Bigeye Tuna. Yellowfin Tuna, Albacore,  Skipjack

Albacore Tuna/Longfin Tuna tends to have higher mercury levels than Skipjack tuna (light tuna).

Tips about Tuna.
Canned products are fully cooked, so it is safe to eat them without cooking. If heated, serve right away or refrigerate leftovers in a container.

Some of my favorite Tuna  Recipes

Tuna Quesadillas


1 can drained tuna fish, packed in water
1 Tablespoon mayonnaise, light
4 flour tortillas
1/2 cup grated cheddar cheese, lowfat

Mix tuna with mayonnaise.

Microwave:
Spoon filing onto half of each tortilla. Top filling with cheese and fold tortilla in half. Microwave on high for 60 seconds. Turn the plate halfway through cooking time.

Stove:
Divide mixture onto two tortillas. Top with cheese and the remaining two tortillas. Spray a skillet with non-stick cooking spray. Brown quesadillas on both sides. Cut in half before serving.

Serving Size: 1/4 of recipe
Yield: 4 servings

Tuna Melt Burger

1 (6 ounce) can tuna
2 medium stalks celery, chopped
1/2 cup low sodium processed American cheese, diced
1/4 cups light mayonnaise
1 Tablespoon instant minced onion
1/4 teaspoon salt
1/8 teaspoon pepper
12 slices whole wheat bread

Preheat oven to 350°F.

Drain tuna and break the meat apart with a fork 4. Wash and chop the celery and dice the cheese.

Mix tuna, celery, cheese, light mayonnaise, dried onion, salt, and pepper into a medium mixing bowl with a wooden spoon.

Spread tuna mixture on six of the pieces of whole wheat bread and place a single slice of bread on top of each (you will make a total of 6 sandwiches).

7. Put each sandwich on a square of aluminum foil, then wrap the foil around sandwiches, folding edges securely 8. Bake about 20 minutes or until hot in the middle. Cool slightly before serving.

Serving Size: 1 sandwich

Tuna and Rice Salad

1 c. uncooked rice
1 c. peas
1 can tuna
4 to 5 scallions
10 cherry tomatoes

Cook rice, then add peas (blanch until defrosted). Chop scallions and cut tomatoes in half. Mix drained tuna with all ingredients. Lightly toss with 1/2 cup of Italian dressing. Refrigerate 1/2 hour before serving. Toss and serve on lettuce or stuff tomatoes.

Cranberry Tuna Salad

2 c. tuna
2 eggs, hard-boiled
1/2 c. chopped, stuffed olives
1 pkg. Knox gelatin, dissolved
1 c. celery, diced
1 tbsp. onion, chopped fine
1 c. salad dressing
1/4 c. cold water

Add 1/2 cup hot water to gelatin. Mix all ingredients and let set 20 minutes.
Makes 4 servings
