Watermelon Sorbet
1 small watermelon
3 egg whites
Finely chopped mint
Scoop out watermelon; puree in blender and pour in ice cream trays
and freeze. Remove from freezer and scoop out mixture and fold
through egg whites until well combined. Refreeze until ready to
serve. Remove from freezer to soften slightly before serving.
Garnish with fresh mint.
Serves 6.
