Mocha Chocolate Ice Cream
2 tall cans Pet milk
2 sq. (or 2 oz.) unsweetened chocolate
2 to 3 tbsp. instant coffee
2 eggs, beaten
1 c. sugar
1 c. chopped pecans
Mix 1 cup of Pet milk, chocolate and coffee in small saucepan. Cook
over medium heat, stirring frequently until chocolate is smooth.
Beat eggs and sugar in large bowl until well blended. Stir in hot
chocolate mixture. Stir in remaining 2 1/3 cups of Pet milk.
Refrigerate until well chilled. Pour into ice cream freezer and
freeze according to the manufacturer's directions. When frozen stir
in pecans and eat.lted. Cool mixture. Add cream and vanilla
and freeze in an ice cream freezer.
