Nancy this is my favorite Buttermilk cake. The recipe came from my
ministers wife. She has since moved and died. Her name was Jean Metzger. She
always made it for for my birthday.
Buttermilk Cake
2. cup sugar
2 unbeaten egg whites
1 teaspoon soda
1/2 teaspoon salt
1/2 cup butter
2 3/4 cup cake flour
1 teaspoon vanilla
1 3/4 cup buttermilk
Frosting;
1 cup sugar
1/4 cup flour
1 cup butter
1 cup milk
Cake
Cream sugar, butter and egg whites. Add sifted cake flour and salt. Add
buttermilk, soda and vanilla. Bake at 350*, 30-40 minutes.
Frosting;
Cook until thick 1/4 c. flour and 1 c. milk. cool completely. Add to
butter and vanilla. ice cake.
I usually make this in two pans and make a layer cake however you can use a
9x13. and it works ok.

Powdered buttermilk does not have to be mixed
separately. I just add the powder with my flour and the water with the my other
liquids and let it mix in the batter.
