Sweet and Sour Beets
small beets
Brine (For 1 Quart Jar):
1 c. sugar
1 c. vinegar
1/4 c. water
Boil beets and peel. If you use large
beets, cut into quarters. Heat brine and
pour over beets in a sterilized jar.
Seal tightly. Variation: Use yellow
beans instead of beets. Add 1 teaspoon
mustard seed to brine.
